The Apiary

Real bees, real hives, a real place. Here’s what that actually means for what ends up in the jar.

Raw & unfiltered

We don’t heat the honey and we don’t filter it. That’s it. Heating makes honey easier to bottle and filtering makes it look clearer on a shelf — but both strip out the pollen, the enzymes, and the flavor that make raw honey what it is. Ours goes from the hive to the jar.

It tastes like the season

The bees forage on whatever’s blooming around Rodeo, so every harvest tastes a little different. Spring honey isn’t summer honey. That variation isn’t a flaw to be blended out — it’s the proof that it came from real flowers in a real place.

Straight from the comb

Our honeycomb is honey exactly the way the bees built it. You cut a piece, spread it on toast or cheese, and eat the wax and all. It’s as close to the hive as you can get without a bee suit — and we only harvest it when the frames are full.

Nothing wasted — beeswax too

The same bees give us beeswax, and we hand-pour every candle from it. No fragrance, no dye, no paraffin. Pure beeswax burns slower and cleaner than the candles you buy at the store, and it smells like honey because that’s exactly what it is.

Photographs from the hives — bees on the frames, the harvest, the family at work — are coming to this page soon. We only use our own photos; no stock, no stand-ins.
